  • 1 lb fresh sushi-grade tuna, cut into 1/2-inch cubes
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon rice vinegar
  • 1/3 cup green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • 1/2 cup chopped pickled ginger
  • 1/2 cup diced fresh pineapples
  • 1/4 cup cilantro
  • 1/4 cup lime juice
  • Bird chilies or scotch bonnets to taste.

Step 1: Prepare Tuna by ensuring the tuna is fresh and of sushi-grade quality. Using a sharp knife, cut the tuna into 1/2-inch cubes.

Step 2: In a mixer bowl put all the ingredients together and mix thoroughly. Once done, gently fold in the cubed tuna into the mixture, ensuring each piece is well coated.

Step 3: After marinating, give the tuna Poke another gentle stir and then serve it in bowls. You can also serve it over cooked rice for a poke bowl, or with tortilla chips as an appetizer.
