  • 12 Ripe Roma Tomatoes
  • 1 Cucumber seedless
  • ½ Red Onion
  • 2 Small Garlic Cloves
  • 1 Medium Yellow Bell Pepper
  • 1 to 2 Hot Scotch Bonnet Peppers
  • 3 Scallions
  • ½ cup Parsley
  • 1 Tbsp Salt (or to taste)
  • ½ cup Olive Oil
  • ½ cup Cold Ice Water
  • 1/3 cup Sherry Vinegar

Step 1: In a large blender, place all ingredients and blend until smooth. 

Step 2: Place a strainer over a large bowl and strain the blended liquid in small batches.  Push liquid through the strainer until the fibrous matter is dry.  Discard fiber matter and repeat until all blended liquid is strained. Use a funnel to pour the strained liquid into an airtight container or glass jar. 

Step 3: Chill for about 2 hours or overnight.  Pre-chill the bowl or a glass and serve the gazpacho cold.  Garnish with tomatoes, cilantro and olive oil.
