Very Berry Cobbler

Enjoy the warm, comforting flavors of our Very Berry Cobbler, a delightful dessert perfect for any occasion. With a buttery, tender crust over a luscious layer of mixed berries, this simple recipe is irresistibly delicious. INGREDIENTS

  • Batter:
  • 1 cup All Purpose Flour
  • 1tbsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • ¾ cup Sugar
  • ¼ cup cold Butter (cubed)
  • 3/4 cup Buttermilk
  • 1 tbsp Vanilla Extract
  • Fruit Filling:
  • 4 ½ cups Frozen or Fresh Mixed Berries (or any fruit)
  • ¾ cup Sugar
  • 2 tbsp Cornstarch

    Method:
  • Preheat oven to 350 degrees.
  • In a heavy casserole dish (9×13).  Place the fruit on the bottom of the dish.  Sprinkle with sugar and cornstarch.  Mix and spread evenly. Set aside.
  • In a mixing bowl add flour, baking powder, baking soda, salt and sugar and stir together.  Add cubed butter and using a fork or clean hands cut the butter into the flour mixture, leaving big flakes of butter in the mixture.  Slowly stir in the buttermilk and vanilla until incorporated but do not over mix.
  • Pour batter over the fruit filling and spread evenly.
  • Bake for 45 to 55 minutes or until the top is golden brown and slightly firm and the fruit is bubbling.  Remove from the oven and let it rest for 5-8 minutes.  Dust with powdered sugar and serve with ice cream or fresh whipped cream.
