Experience a delightful twist on a classic favorite with ube cinnamon rolls, where vibrant purple yam meets the warm, comforting flavors of cinnamon and sugar.

INGREDIENTS

Dough Ingredients:

  • 360g bread flour
  • 100g white sugar
  • 10g instant yeast
  • 5g salt
  • 100g soft butter
  • 2 large eggs
  • 260ml buttermilk
  • 1 tsp UBE flavoring (optional)

Filling Ingredients:

  • 180g brown sugar
  • 60g cinnamon powder
  • 80g soft butter

Icing Ingredients:

  • 8 oz cream cheese
  • 60g butter
  • 120g powdered sugar
  • 5g vanilla extract
  • 45g heavy cream

Instructions for the Dough:

  1. Activate Yeast: In a small bowl, combine instant yeast with a bit of warm buttermilk (from the total 260 ml) and 1 teaspoon of sugar. Let sit for 5-10 minutes until frothy.
  2. Mix Dry Ingredients: In a large bowl, combine bread flour, sugar, and salt. Set aside.
  3. Combine Wet Ingredients: In a separate bowl, mix buttermilk, eggs, softened butter, and ube flavoring (if using), then add the yeast mixture.
  4. Knead the Dough: Gradually mix wet ingredients into dry ingredients until a sticky dough forms. Knead on a floured surface for about 10 minutes until smooth and elastic, or use a stand mixer with a dough hook.
  5. Let Dough Rise: Place the dough in a greased bowl, cover with a kitchen towel or plastic wrap, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.

Instructions for the Filling:

  1. Prepare Filling: In a small bowl, mix brown sugar and cinnamon.
  2. Roll the Dough: After the dough has risen, punch it down and roll it out on a floured surface into a ¼-inch thick rectangle.
  3. Spread Butter and Add Filling: Spread soft butter over the dough and sprinkle the cinnamon-sugar mixture evenly on top.
  4. Roll and Cut: Starting from the long edge, tightly roll the dough into a log and slice it into 1-inch rolls.

For the Second Rise:

  1. Prepare Baking Dish: Grease a large baking dish (9×13 inches).
  2. Place Rolls in Dish: Arrange the rolls cut-side up in the dish, cover with a towel, and let rise for 30-45 minutes until puffy.

Bake the Rolls:

  1. Preheat Oven: Preheat to 350°F (175°C).
  2. Bake: Bake for 25-30 minutes until golden brown. Let cool slightly while preparing the icing.

For the Icing:

  1. Prepare Icing: Beat cream cheese and butter until smooth, then gradually add powdered sugar and vanilla. Mix in heavy cream until creamy.

Assembly:

  1. Ice the Rolls: Spread cream cheese icing over warm rolls, allowing it to melt slightly for a gooey finish.
  2. Serve: Enjoy the soft, buttery rolls with the rich flavor and sweetness of cinnamon and cream cheese icing.
