Treat yourself to the elegant and refreshing delight of Strawberry Romanoff, a classic dessert that beautifully showcases the vibrant flavors of fresh strawberries.
INGREDIENTS
For the Base:
- 2 oz Graham crackers, crushed
- 1 oz Unsalted butter, melted
For the Berries Compote:
- 2 oz Blackberries
- 2 oz Blueberries
- 2 oz Raspberries
- 2 oz Caster sugar
- 1 oz Cornstarch
For the Cream Cheese Mixture:
- 4 oz Cream cheese
- 2 oz Sour cream
- 2 oz Heavy cream
- 4 tbsp Caster sugar
- 2 tbsp Grand Marnier
- 2 tbsp Vanilla extract
For the Strawberries:
- 8 oz Strawberries, sliced
For Garnish:
- A few berries (blackberries, blueberries, raspberries)
- Icing sugar
- Mint leaves
- Cigarillos (optional)
Instructions
1. Prepare the Graham Cracker Base:
- Melt unsalted butter and mix with crushed graham crackers until combined. Press into the bottom of a serving glass or dish and set aside.
2. Make the Berry Compote:
- In a saucepan, combine blackberries, blueberries, raspberries, and caster sugar. Bring to a boil, then purée with a stick blender or mash with a fork.
- Return to heat and thicken with cornstarch, stirring until smooth. Remove from heat and chill until cool. Pour over the graham cracker base.
3. Prepare the Cream Cheese Mixture:
- In a mixing bowl, beat cream cheese, sour cream, caster sugar, Grand Marnier, and vanilla until smooth. Gradually add heavy cream and whip until light and fluffy. Refrigerate until well-chilled.
4. Assemble the Romanoff:
- Pipe or spoon half of the cream cheese mixture over the berry compote. Arrange sliced strawberries around the inside of the glass and place quartered strawberries in the middle. Top with the remaining cream cheese mixture.
5. Garnish:
- Garnish with fresh berries, a dusting of icing sugar, fresh mint leaves, and cigarillos (optional).
