INGREDIENTS
- 10 large eggs, yolks and whites separated
- ½ tsp cream of tartar
- 1 tsp vanilla extract
- ¾ cup granulated sugar
- 3 tbsp confectioners’ sugar (for dusting)
- 14 oz condensed milk
Instructions for the Meringue:
- Beat Egg Whites: In a mixing bowl, combine egg whites and cream of tartar. Beat with an electric mixer until soft peaks form.
- Make Meringue: Gradually add granulated sugar while mixing until semi-firm peaks form.
- Preheat Oven: Preheat oven to 350°F (175°C).
- Prepare Baking Sheet: Line a baking pan with wax paper and lightly grease it.
- Spread Meringue: Spread the meringue evenly over the greased wax paper.
- Bake: Bake for 20-22 minutes until the top is light to medium brown.
For the Custard Filling:
- Cook Egg Yolks and Condensed Milk: In a saucepan, combine egg yolks and condensed milk. Cook over medium heat, stirring continuously until thickened.
- Add Vanilla: Remove from heat and stir in vanilla extract. Let cool.
Assemble the Brazo de Mercedes:
- Cool Meringue: Allow the baked meringue to cool for a few minutes.

- Flip the Meringue: Place a sheet of wax paper on top, followed by a baking sheet, and carefully flip the meringue.
- Add the Filling: Remove the top wax paper and spread the custard filling evenly.
- Roll the Meringue: Starting from the longest side, carefully roll the meringue with the filling inside.
