Indulge in the exquisite flavors of Brazo de Mercedes, a beloved Filipino dessert that beautifully combines rich tradition and culinary artistry.

INGREDIENTS

  • 10 large eggs, yolks and whites separated
  • ½ tsp cream of tartar
  • 1 tsp vanilla extract
  • ¾ cup granulated sugar
  • 3 tbsp confectioners’ sugar (for dusting)
  • 14 oz condensed milk

Instructions for the Meringue:

  1. Beat Egg Whites: In a mixing bowl, combine egg whites and cream of tartar. Beat with an electric mixer until soft peaks form.
  2. Make Meringue: Gradually add granulated sugar while mixing until semi-firm peaks form.
  3. Preheat Oven: Preheat oven to 350°F (175°C).
  4. Prepare Baking Sheet: Line a baking pan with wax paper and lightly grease it.
  5. Spread Meringue: Spread the meringue evenly over the greased wax paper.
  6. Bake: Bake for 20-22 minutes until the top is light to medium brown.

For the Custard Filling:

  1. Cook Egg Yolks and Condensed Milk: In a saucepan, combine egg yolks and condensed milk. Cook over medium heat, stirring continuously until thickened.
  2. Add Vanilla: Remove from heat and stir in vanilla extract. Let cool.

Assemble the Brazo de Mercedes:

  1. Cool Meringue: Allow the baked meringue to cool for a few minutes.
  2. Dust with Confectioners Sugar: Lightly sprinkle confectioners’ sugar on top.
  3. Flip the Meringue: Place a sheet of wax paper on top, followed by a baking sheet, and carefully flip the meringue.
  4. Add the Filling: Remove the top wax paper and spread the custard filling evenly.
  5. Roll the Meringue: Starting from the longest side, carefully roll the meringue with the filling inside.

Serve:

  1. Transfer and Serve: Place the rolled Brazo de Mercedes on a serving plate, slice, and serve.
