- 1 Stick Butter Cubed
- 7 oz Dark Chocolate
- 2/3 cup Sugar
- 2 tsp. Vanilla Extract
- 2 tbsp Hot Water (Coffee Optional)
- 5 large Eggs Separated & room temperature
- 1/3 c Coco Powder, sifted.
Step 1: Separate Eggs and allow to arrive at room temperature, meanwhile preheating oven to 350 degrees.
Step 2: Prepare 9-inch spring-form pan or cake pan with parchment paper and baking sheet for water bath.
Step 3: Have a small saucepan filled with 1/3 of water on a low simmer. Place a heat resistant glass or metal bowl on top. In the bowl, allow the butter and chocolate to melt while stirring occasionally to combine ingredients. Do not boil or burn the chocolate. Once melted remove from the pan and set aside to cool down for a few minutes.
Step 4: In a large bowl beat the egg whites to a gloss stiff peak. (3- 4 minutes.)
Step 5: When the chocolate has cooled slightly, stir in the sugar, vanilla and water. Add the egg yolks in one-at-a-time before stirring until smooth. Then, using a rubber spatula, gently fold in the whipped egg whites until combined. Do not over mix.
Step 6: Pour the batter into the prepared baking pan, sprinkling the top of the batter with sugar. Place the pan on a baking sheet before adding water to the sheet and then bake for 30 mins. Remove from the oven and allow to cool for 20 minutes before cutting. Serve with your favorite ice cream, powdered sugar or coco powder.
