Niman Ranch Pan Seared NY Striploin with Charred Jalapeno & Rapini
Talk about a flavor-packed meal! This dish elevates the classic grilled steak by adding charred jalapeno, wasabi, sesame, roasted garlic and slightly bitter rapini. It’s a flavor combo you’ll fall in love with!
Serves: 1 steak per person; Prep & Cook time: about 20-30 miuntes
Roasted Garlic Sesame Rapini
INGREDIENTS
- 1/4 bunch rapini (brocoli rabe)
- 1 head roasted garlic (see method below)
- a few dashes light soy sauce
- 1/4 c water
- 2 tsp sesame oil
- 1 tsp sesame seeds
- salt & pepper
Method
Roasted Garlic:
Preheat oven to 400°F.
Peel and discard the papery outer layers of the whole garlic bulb.
Cut 1/4 to a 1/2 inch from the top of cloves to expose the individual cloves of garlic.
Place the head of garlic in aluminum foil, drizzle with olive oil and season with salt.
Roast in the oven for 30-40 minutes. Let cool completely before squeezing the garlic cloves from the bulb, or removing the cloves with a fork.
Rapini:
Rinse and roughly chop the rapini. Set aside.
Over medium medium heat, add sesame seeds to a dry, medium-sized, pan and toast until fragrant. Add roasted garlic, sesame oil, and stir.
Add rapini, soy sauce, and water and cover the pan. Let steam for 1-2 minutes before seasoning with salt and pepper.
Remove from heat and serve with steak.
NY Strip
INGREDIENTS
- 1 Niman Ranch NY Striploin
- 1 whole lime
- 1 whole jalapeno
- 1 tude wasabi paste
- salt & pepper
METHOD
Preheat your grill.
Allow steak to come to room temperature before rubbing with olive oil and seasoning with salt and pepper.
Toss whole lime and jalapeno in olive oil and salt. Slice the lime in half. Place whole jalapeno and sliced lime face down on the grill. Cook until charred. Once done, slice jalapeno and set aside.
Put steak on the grill and let sit for about 45 second. Turn steak 45° and let sit for another 45 seconds. Flip the steak and repeat. Cook to your preferred internal temperature.
Let the steak rest for 5 minutes before serving.
Serve steak with Roasted Garlic Sesame Rapini, charred jalapeno and a dollop of wasabi. Squeeze charred lime over dish and enjoy.
